ADU stands for Analog-to-Digital Unit. For CCD cameras, the number of Photoelectrons per ADU tells you how many photoelectrons are required to increase the pixel value by one count. A photoelectron is produced whenever a photon (light packet) is detected by the pixel. Also known as Gain.
